
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Parmesan cheese
Black pepper
Olive oil
2 cups marinara sauce
Mozzarella cheese
1/4 cup chopped fresh basil
Preheat the oven to 375°F.
Place the flour, beaten eggs, and breadcrumbs each in separate shallow bowls. Stir in the grated Parmesan cheese with the breadcrumbs. Season the chicken breasts with salt and pepper.
Dredge each chicken breast in the flour, shaking off any excess. Dip the chicken into the beaten eggs, then coat in the Parmesan breadcrumbs, pressing to adhere.
Heat enough olive oil in a large skillet over medium-high heat to cover the bottom. Once hot, add the breaded chicken breasts and cook until golden brown on each side, about 3-4 minutes per side.
Remove the chicken from the skillet and place them in a 9x13 inch baking dish. Pour marinara sauce over each chicken breast and top with fresh mozzarella slices.
Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Serve hot, garnished with chopped fresh basil. Enjoy!
