
Dark Chocolate - 225g
Unsalted Butter - 60ml
Eggs, separated - 4
Granulated Sugar - 50g
Heavy Cream - 120ml
Whipped cream and chocolate shavings, for garnish
Melt the chocolate and butter in a double boiler or microwave, stirring until smooth. Set aside to cool slightly.
In a large bowl, beat the egg yolks with the sugar until light and fluffy.
In a separate bowl, beat the egg whites until stiff peaks form.
Fold the melted chocolate mixture into the egg yolks until well combined.
Gently fold in the whipped egg whites until no white streaks remain.
Whip the heavy cream until stiff peaks form, and gently fold it into the chocolate mixture.
Spoon the chocolate mousse into individual cups or bowls, and chill in the refrigerator for at least 2 hours, or until set.
Serve the chocolate mousse garnished with whipped cream and chocolate shavings, if desired. Enjoy!
